Hi:

Upon first showing Power BI to a new user, what are the best topics to discuss in terms of intructing how to edit - not create - Power BI dashboards and other reporting?

You may start from Power BI learning catalog. Select a role the new user want to play and check the modules in its learning path.

Edit what @Anonymous ? The DAX code, the Visuals, etc? 

I recommend they start from scratch. Just editing things will not help them understand the concepts of Power BI and they won't fully understand what they are editing, or how to fix things when they inevitably break them with a bad edit.
