My report is linking to server of dbo.data tables which in some cases are huge and I only want to import some fields from the data tables not all. I have searched to see if there is a way to do this but options don't appear to satisfy my requirement. Is it possible to export to csv, a list of just the fields that are used (per example screen below) in each visual in my report and identify the visual, the field and the table name and perhaps any associated criteria? A step by step screen instruction would be helpful if it is possible.

Based on my understanding, you want to get the fields with red arrows names contained by dataset tables, right?
What is your connection?
If it is import or Direct Query, please have a try.
Click Home>>Transform data >>Transform data.
In Power Query.
Copy the tables your want. Then do some operations on the copied table.
Select the columns your do not need. Then right click,select remove the columns.
Then Close and apply.
If I have misunderstood your meaning , please provide more details with your desired output and your pbix file without privacy information.
