I have data like this
What I would like to do is to build a table visual where I can display all thumbnails for every target and items for each date. (and this is quite easy and already done by duplicating all URL and setting them as IMG URL)
Then if I click on any thumbnail, in another visual (HTML viewer or image viewer) I would like to get that very bigger picture.
For me this is the hard part, because everywhere I click I just get the first picture for that target, I can't find the way to display different pictures for the same target/date according to the selected/clicked item.

1. How did you make the matrix table with all the elements in row side by side? If I add elements I get them like in pivot tables "embedded" under the first element
Go to visual format field -> Row headers -> turn off "Stepped layout".
2. Do you think it is possible to add a label under the pictures in the grid?
Based on my test, no.
3. Do you think there is a way to add a link so that pictures are also opened externally in a browser?
To my knowledge, only "Web URL" data category can be opened externally in a browser.

True, I could add a "duplicated" column and format it to Web URL.
How about then creating the link/button/whatever to open it externally?

You can choose to display a hyperlink icon instead of a URL or format link text as a hyperlink.
