The stacked bar chart above shows average scores for students for various subjects. I want the total to display as the overall average not the sum of the averages as it does at present. How can I achieve this?

Based on my test, there is only Total labels available in Stacked Bar Chart, and it could not be customed to other values such as Average/First/... Lables.
If you also want this in power bi, let the power bi community to know this things and give your votes at power bi site's feedback -https://ideas.powerbi.com/ideas/
So maybe you could use Line and Stacked Column Chart instead like this:

@Anonymous , Stacked is not meant for % measure. Use this traditional approach, where you can use another measure

Unfortunately that doesn't really solve it for me. My data is percentages and I want to show them as such along with a graphical representation, i.e. a stacked bar or column.
