Is there a way to just use the day as a date field?  Like Wednesday, Thursday, Friday and have it sort chronoligically?

You generally use two fields,

For instance a column DayofMonth = DAY([yourdate/timedata]) will give you the number of the day.

 

Then you make a second column with FORMAT([yourcolumnwithdaynumber], "DDDD") , and name it DayofWeek or something.

 

Then in your analysis, you drag in DayofWeek, and choose "sort by" your initial numerical day column - DayofMonth.
