How do I create a custom date slicer to show all data from a particular date onwards? E.g. 17/01/2017 onwards.
It is like a page level filter, but instead in a form of a slicer so it's easy to select and de-select.

You can create a slicer using your date field, choose After in the date slicer, and input 2017/1/17 as start date in the slicer to filter your visual.
Or you can create a column in your table using DAX below, then create a slicer using the column and set its value to 1.
checkcol = IF(Table[DateKey]>=DATE(2017,1,17),1,0)
