Creating Category from columns for waterfall chart 'breakdown'

I have 3 columns each containing relevant values for clothing.

I have month data that I can filter by and I can also create summations. 

How would I add this data to a category so that I may filter by only shoes or only shirts?

 

I want to use this data in a waterfall chart, but I require this informaiton for use in the breakdown component. 

                   Shirts:       Shoes:       Pants:

month1     +25              +2            +6

month2     -3                 -7            +14

month3     +33              -8            +15

Unpivot the columns so you get three columns - month, type of clothing and value
