Concatenating date fields along with time and text fields using "&" or other functions do not hold the set format of the date or time leaving it to power query default format.
Any tips without having to create additional fields in DAX or Power Query just for formatting to work.

I would recommend having a really robust Date table with all the fields in the formats you require, but if you are wanting to avoid creating extra fields, you can try the FORMAT function inside the concatanated & DAX statements.

Date and Time Column =
FORMAT( Table[DateColumn], "MM/DD/YYYY" ) & " " & FORMAT( Table(TimeColumne", "hh:mm:ss" )
