How can I add a column which has a count of the 'Candidate + Date' column?
So for the bottom highlighted rows it would be 5 as they appear 5 times.

you can do it like this:
Count of Candidate + Date =
CALCULATE(
COUNT('Table'[Candidate + Date]),
ALLEXCEPT('Table','Table'[Candidate + Date])
)
