If you want to sort it by number in the bar chart, you can create a calculated column like this and put it in the legend field:
Column =
VAR _date = [Date]
RETURN
RANKX ( FILTER ( 'Table', 'Table'[Date] = _date ), 'Table'[value],, ASC, DENSE )

@sittitek , this will sort only on legend inside the bar. If there are more values control it by subtotal rank

Note that there is an "i" warning. You are trying to show too much data. Might want to limit it to the top x per date.
Anyway, I don't think the standard stacked bar has the option to sort each individual bar differently. There might be custom visuals out there that do that.
