I'm struggeling to understand why my TOTALYTD function doesn't work as it should be.

You need to create a Calendar table which contains a date column, build a relationship between Invoice table and Calendar table based on the date column. Then create a measure like below:
InvoiceAmount YTD = TOTALYTD([InvoiceAmount Measure], Calendar[Date])
