I've created a Datetable in PowerBI and connected it to my date field <StartDate> in another table. I've created a slicer on the <Date> field from the Datetable. However, if I set my slicer to 1-1-2021 to 31-12-2021, I don't get the 1-1-2021 <StartDate> line in my table, but if I set my slicer to 31-12-2020 to 31-12-2021 I do get the line of 1-1-2021 <StartDate>. Please see below.

Have you checked if there are any other filters applied in the visual or page which may be preventing the date from showing correctly.
I suggest you create a new page and test the date slicer there (use just a date slicer and a table visual with dates only)

First, could you check if the mapping of these values is correct? You can do this by placing both the [date] and [startdate] column next to eachother in a table. when you look for de row with 1-1-2021 it should contain that same date in both columns. If correct, it should like similar to the image below. if there is something off in the mapping, you will probably see empty values in the startdate column.
