Display order in charts.. not alphabetically and not by a value available in the chart.

I am still a beginner and I am stuck on something that I think should be quite basic.

Let's say I want to build a chart showing growth, but I want the elements in the chart sorted by size, so I can have multiple separate charts side by side displaying different measures, but all sorted the same way (and not alphabetically).

I think I need to create a virtual table, where the elements can be ordered by the measure I want and then use this virtual table in a chart. But I need some input on how to do this and also on how to control the sort order on something not displayed in the chart and also not alphabetically.

Any solution should ideally work for Table and Matrix as well.
