I tested your issue with version 2.120.731.0 64-bit (August 2023) and I can apply the changes in the options menu . Has your desktop been updated to the latest version?

So this problem occurs when you connect to FABRIC Lakehouse using a Direct query connection, right? When you open the Power Query Editor after you get the data in Desktop, do you see the query that changes the field type?
