waterfall chart

is there a way to organize waterfall chart by alphabetically rather than by largest unit to smallest unit?

Do you mean Alphabetically by the value in the "Category" section?  If so, click on the ... button on the top right of the visual and select "Sort By <FieldName>" where <FieldName> will be whichever field you have placed in "Category"

Sorting the entries alphabetically is only related to data field level, you just need to do it under Modeling tab as @Anonymous said. And by default it is sorted alphabetically already.
