Hello,
I am finding that sometimes if I put a field in the Values section then it reduces the number of rows in the table. Please can you tell me why this happens?
I've tried to recreate the problem in a simple database but haven't been able to recreate the behaviour.

I have to admit that this behavior can be something irritating, at least if one is not constantly working with Power BI 😉
First an important conceptual distinction has to be made of the two different types of fields that are available:
The table visual by default shows what's in the table. If you drag a categorical column into the table you see all the values, of this column, but as you may have noticed, just unique values are shown.
If you add a numerical field to the table, the default behavior changed a little, rows are vanishing. This is always the case, if a value does not exist in the table. This can be changed if you activate the option, "Show Items with no data" on of the categorical fields.
